Ingredients

1 cup (226g) unsalted butter, melted

1 cup (200g) granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup (130g) all-purpose flour

1/2 cup (45g) unsweetened cocoa powder

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup (150g) Biscoff cookie butter

1/2 cup (70g) Biscoff cookies, roughly crushed

1/2 cup (90g) chocolate chips (optional)

Extra Biscoff cookie butter for drizzling (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease and line an 8x8 inch baking pan with parchment paper, leaving an overhang for easy removal.

Mix Wet Ingredients: In a large mixing bowl, whisk together the melted butter and granulated sugar until well combined. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

Combine Dry Ingredients: In another bowl, sift together the all-purpose flour, cocoa powder, baking powder, and salt.

Combine Wet and Dry: Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix; the batter should be thick and fudgy.

Add Biscoff Ingredients: Gently fold in the cookie butter, crushed Biscoff cookies, and chocolate chips (if using), ensuring everything is evenly distributed.

Bake: Pour the brownie batter into the prepared baking pan, smoothing the top with a spatula. Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs (but not wet batter).

Cool: Once baked, remove the brownies from the oven and let them cool in the pan for about 10 minutes. Use the parchment overhang to lift the brownies out of the pan and place them on a wire rack to cool completely.

Drizzle (Optional): If desired, melt a few tablespoons of Biscoff cookie butter in the microwave for about 15-20 seconds until pourable. Drizzle over the cooled brownies for an extra layer of flavor.

Serve: Once cooled, cut the brownies into squares and serve. Enjoy the rich, fudgy chocolate flavor with the unique, spiced taste of Biscoff!
