Ingredients

500g boneless chicken thighs, cut into bite-sized pieces

200g mushrooms, sliced (shiitake or button mushrooms work well)

2 tablespoons black pepper, freshly cracked

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

4 cloves garlic, minced

1-inch piece ginger, grated

1 medium onion, sliced

1 bell pepper (red or green), sliced

2 green onions, chopped (for garnish)

Cooked rice or noodles, for serving

Optional: red chili flakes for heat

Instructions

Marinate the Chicken: In a bowl, combine chicken pieces with 1 tablespoon of black pepper, soy sauce, and oyster sauce. Mix well and let it marinate for at least 30 minutes for enhanced flavor.

Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat.

Sauté Aromatics: Add minced garlic and grated ginger to the pan. Sauté for about 30 seconds until fragrant.

Cook the Chicken: Add the marinated chicken to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the chicken is no longer pink. Ensure it gets a nice sear on the edges.

Add Vegetables: Stir in the sliced onions and bell pepper. Cook for an additional 3 minutes until the veggies begin to soften.

Add Mushrooms: Fold in the sliced mushrooms and remaining black pepper (1 tablespoon). Sauté for another 3-4 minutes until the mushrooms have released their moisture and cooked down.

Finish with Oil: Drizzle the sesame oil over the mixture for extra flavor, tossing everything together to coat.

Serve: Remove from heat and garnish with chopped green onions. Serve hot over cooked rice or noodles. For an extra kick, sprinkle some red chili flakes on top.
