Blackberry Lime Cheesecake Cupcakes

For the Cupcakes:

1 cup all-purpose flour

1/2 cup granulated sugar

1 1/2 tsp baking powder

1/2 tsp salt

1/2 cup unsalted butter, melted

2 large eggs

1 tsp vanilla extract

Zest of 1 lime

1/4 cup buttermilk

For the Cheesecake Filling:

8 oz cream cheese, softened

1/2 cup powdered sugar

1 large egg

1 tbsp lime juice

1 tsp vanilla extract

For the Blackberry Topping:

1 cup fresh blackberries

1/4 cup granulated sugar

1 tbsp lime juice

1 tbsp cornstarch

1 tbsp water

Prepare the Cupcake Batter: Preheat your oven to 350°F (175°C). Line a cupcake pan with paper liners. In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, combine the melted butter, eggs, vanilla extract, lime zest, and buttermilk. Mix well and pour the wet ingredients into the dry ingredients. Stir until just combined (do not overmix).

    Make the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese with the powdered sugar until smooth. Add the egg, lime juice, and vanilla extract, and mix until well incorporated.

      Assemble the Cupcakes: Fill each cupcake liner about halfway with the cupcake batter. Then, add a spoonful of the cheesecake filling on top of the batter in each liner. Finally, add a small dollop of the remaining batter on top, covering the cheesecake layer.
