Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

2 tablespoons sugar

2 large eggs

2 cups buttermilk

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

2 cups fresh or frozen blueberries

Maple syrup, for serving

Powdered sugar, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with non-stick spray or butter.

Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until combined.

Combine Wet Ingredients: In a separate bowl, whisk together the eggs, buttermilk, melted butter, and vanilla extract until smooth.

Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix; a few lumps are okay.

Add Blueberries: Gently fold in the blueberries, making sure they are evenly distributed throughout the batter.

Pour into Baking Dish: Pour the batter into the prepared baking dish, spreading it out evenly.

Bake: Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Cool and Serve: Allow the casserole to cool for about 10 minutes before slicing. Serve warm with maple syrup drizzled on top and a sprinkle of powdered sugar, if desired.

Enjoy! Gather your family or friends, and enjoy this delicious and comforting pancake casserole!
