Ingredients

For the crust:

1 ½ cups all-purpose flour

½ cup powdered sugar

½ cup unsalted butter, softened

1 teaspoon vanilla extract

¼ teaspoon salt

For the filling:

3 large eggs

1 cup granulated sugar

¼ cup all-purpose flour

1/3 cup freshly squeezed lemon juice (about 2 large lemons)

Zest of 1 lemon

1 ½ cups fresh blueberries (or frozen, thawed)

½ teaspoon baking powder

Powdered sugar for dusting (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with parchment paper for easy removal.

    Make the Crust:

      - In a mixing bowl, combine 1 ½ cups of flour, ½ cup of powdered sugar, and ¼ teaspoon of salt.

        - Add in the ½ cup of softened butter and 1 teaspoon of vanilla extract.

          - Mix until the mixture resembles coarse crumbs and starts to clump together.

            - Press this mixture evenly into the bottom of the prepared pan to form the crust.

Bake the Crust: Place the crust in the preheated oven and bake for 15-20 minutes, or until lightly golden. Remove from the oven and let cool slightly.

                Prepare the Filling:

                  - In a separate bowl, whisk together the 3 large eggs and 1 cup of granulated sugar until well combined and frothy.

                    - Add in ¼ cup of flour, 1/3 cup of fresh lemon juice, the zest of 1 lemon, and ½ teaspoon of baking powder. Whisk until smooth.

                      - Gently fold in the blueberries, making sure they are well distributed in the mixture.

Combine and Bake: Pour the filling over the pre-baked crust, smoothing it out evenly. Return the pan to the oven and bake for an additional 25-30 minutes, or until the filling is set and lightly jiggles in the center.

Cool and Slice: Once baked, remove from the oven and allow the bars to cool at room temperature. For best results, refrigerate them for at least 2 hours to set completely. Once chilled, dust the top with powdered sugar (if desired) and cut into squares.

Serve: Enjoy these zesty blueberry lemon bars chilled or at room temperature as a delightful treat!
