1 teaspoon cinnamon

1/4 cup vegetable oil (or melted coconut oil)

2 large eggs

1 teaspoon vanilla extract

1 cup fresh or frozen blueberries

Optional: 1/2 cup chopped nuts (such as walnuts or pecans) for added crunch

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with cooking spray.

    Prepare the Oats: In a medium bowl, combine the rolled oats and buttermilk. Let this mixture sit for about 15 minutes to soften the oats.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the whole wheat flour, brown sugar, granulated sugar, baking soda, baking powder, salt, and cinnamon until well combined.

        Combine Wet Ingredients: In another bowl, whisk together the oil, eggs, and vanilla extract. Once the oat mixture has soaked for 15 minutes, add it to the wet ingredients and stir to combine.

          Combine Wet and Dry Ingredients: Pour the wet ingredients into the bowl with the dry ingredients. Gently fold until just combined—be careful not to overmix as this can make the muffins dense.

            Add Blueberries: Gently fold in the blueberries (and nuts, if using). Ensure they are evenly distributed throughout the batter.

              Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. This will allow room for the muffins to rise.

                Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
