4 large flour tortillas

6 large eggs

1/2 cup milk

1 cup cooked chorizo (or diced ham for a milder flavor)

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (mix of red and green)

1/4 cup diced onions

1 cup fresh spinach, chopped

1/2 teaspoon ground cumin

Salt and pepper to taste

Salsa (for serving)

Fresh cilantro (optional, for garnish)

Prep Your Ingredients: Begin by gathering all ingredients. Ensure your chorizo is cooked according to package instructions, or if using ham, dice it into small pieces. Dice the bell peppers and onions, chop the spinach, and set aside.

    Whisk Eggs: In a large bowl, crack the eggs and pour in the milk. Whisk together until well-blended. Add cumin, salt, and pepper to taste.

      Sauté Veggies: In a large skillet over medium heat, add a splash of olive oil. Once hot, add the diced onions and bell peppers. Sauté for about 3-4 minutes until they soften.

        Add Protein: Add the cooked chorizo or diced ham to the skillet, stir, and cook together for another 2-3 minutes to combine the flavors.
