1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 pound ground turkey or beef

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes (with juices)

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

4 large eggs

Fresh cilantro or parsley, for garnish

Avocado slices, for serving

Hot sauce, for serving (optional)

Instructions
 

Heat Up: In a large skillet over medium heat, add olive oil. Once hot, add the diced onion and sauté for about 3-4 minutes until translucent.

    Add Aromatics: Stir in the minced garlic and diced bell pepper, cooking for another 2-3 minutes until the bell pepper softens.

      Brown the Meat: Push the vegetables to the side of the skillet and add the ground turkey or beef. Break it apart with a wooden spoon and cook until browned, around 5-7 minutes. Mix in the vegetables once the meat is cooked.

        Spice it Up: Stir in the black beans, diced tomatoes (with their juices), chili powder, cumin, smoked paprika, salt, and pepper. Let the mixture come to a gentle simmer, stirring occasionally. Cook for about 10 minutes, allowing the flavors to meld.

          Prepare Eggs: In a separate non-stick skillet, cook the eggs to your liking. You can scramble them, fry them sunny-side up, or make them over-easy—whatever you prefer!
