2 slices of sourdough bread

2 tablespoons unsalted butter, softened

1 slice of sharp cheddar cheese

1 slice of Gruyère cheese

1 large egg

2 slices of cooked bacon (or turkey bacon for a lighter option)

1 ripe avocado, sliced

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Instructions
 

Preheat Skillet: Heat a non-stick skillet over medium-low heat.

    Prepare Bread: Spread softened butter on one side of each slice of sourdough bread.

      Assemble the Sandwich: Place one slice of bread, buttered side down, onto the skillet. Layer with the cheddar cheese, followed by the Gruyère, cooked bacon, and slices of avocado. Season with a little salt and pepper.

        Cook Egg: In a separate small skillet, cook the egg to your preference (fried sunny-side-up or over-easy works great).

          Complete the Sandwich: Once the cheese begins to melt, place the second slice of bread on top, buttered side up. Gently press down with a spatula.
