2 tablespoons melted butter (or coconut oil for a dairy-free option)

1 teaspoon vanilla extract

Instructions
 

Mix the Dry Ingredients: In a large bowl, whisk together the flour, brown sugar, baking powder, salt, and ground cinnamon until well combined.

    Blend the Wet Ingredients: In another bowl, beat the egg and then add the milk, melted butter, and vanilla extract. Mix until fully combined.

      Combine Dry and Wet Ingredients: Pour the wet mixture into the dry mixture. Stir gently until just combined. It’s okay if there are a few lumps; overmixing can lead to dense pancakes.

        Preheat the Pan: Heat a nonstick skillet or griddle over medium heat. Add a small amount of butter or oil to coat the surface.
