Ingredients

8 oz penne pasta

1 lb boneless, skinless chicken breasts, cubed

2 tbsp olive oil

1 medium onion, diced

4 cloves garlic, minced

2-3 fresh jalapeños, sliced (adjust for spice preference)

1 cup buffalo sauce (store-bought or homemade)

1 cup heavy cream

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the cubed chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Sauté the Vegetables: In the same skillet, add the diced onion, minced garlic, and sliced jalapeños. Sauté for about 3-4 minutes until the vegetables are softened and fragrant.

Add Sauce: Return the cooked chicken to the skillet. Pour in the buffalo sauce and heavy cream, stirring well to combine. Let it simmer for about 5 minutes, allowing the sauce to thicken slightly.

Combine with Pasta: Add the drained penne pasta to the skillet, tossing it gently to coat the pasta thoroughly with the buffalo chicken sauce.

Cheesy Goodness: Reduce the heat to low, and stir in the shredded cheddar and mozzarella cheeses. Mix until the cheeses are melted and everything is evenly coated.

Final Touches: Taste and adjust seasoning if necessary. Remove from heat, and let it sit for a minute to thicken further.

Garnish and Serve: Serve hot, garnished with fresh chopped parsley. You can add extra slices of jalapeño on top for a bit more heat and a drizzle of additional buffalo sauce if desired.
