1/2 cup sliced cucumbers

1/4 cup chopped green onions

1/4 cup cream cheese (softened)

1/4 cup ranch dressing (or blue cheese dressing)

8-10 rice paper wrappers

Fresh cilantro leaves (optional, for garnish)

Sesame seeds (optional, for garnish)

Instructions
 

Prepare the Buffalo Chicken: In a mixing bowl, combine the shredded chicken with the Buffalo sauce, stirring until well coated. Set aside to marinate for about 10 minutes.

    Prepare Your Work Surface: Fill a shallow dish with warm water. This will be used to soften the rice paper wrappers.

      Soak the Rice Paper: One at a time, dip a rice paper wrapper into the warm water for 10-15 seconds, or until it becomes pliable. Carefully remove it and place it on a clean, damp kitchen towel or a cutting board.

        Spread the Cream Cheese: Using a butter knife or spatula, spread a thin layer of softened cream cheese in the center of the rice paper wrapper. This will add a creamy flavor and help hold the ingredients in place.
