Ingredients

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup buffalo sauce (adjust to taste)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1 cup shredded sharp cheddar cheese

4 large whole wheat or spinach tortillas

1 cup shredded lettuce

1 large tomato, diced

1/2 cup diced red onion

1/4 cup ranch dressing (optional)

Fresh cilantro or parsley for garnish (optional)

Instructions

Prepare the Chickpeas: In a medium bowl, combine the drained chickpeas, buffalo sauce, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well to ensure all chickpeas are coated evenly.

Cook the Chickpeas: Heat a medium skillet over medium heat. Add the seasoned chickpeas and cook for about 5-7 minutes, stirring occasionally, until they are heated through and slightly crispy.

Assemble the Wraps: Take a tortilla and layer with shredded lettuce, cooked buffalo chickpeas, diced tomatoes, diced red onion, and a generous sprinkle of shredded cheddar cheese.

Optional Dressing: Drizzle ranch dressing on top of the ingredients if using, and add fresh herbs for extra flavor.

Wrap It Up: Roll the tortilla tightly, folding in the sides as you go to enclose the filling. Secure with a toothpick if needed or wrap in parchment for serving.

Heat the Wraps (Optional): For a warm, melty finish, place the wraps seam-side down in the skillet over low heat for 2-3 minutes on each side, or until golden and the cheese is melted.

Serve: Slice the wraps in half and serve immediately with extra buffalo sauce or ranch dressing on the side.
