Ingredients

1 pound ground turkey

1/2 cup buffalo sauce (more or less to taste)

1 tablespoon olive oil

1/2 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon onion powder

Salt and pepper to taste

1 head of romaine lettuce or butter lettuce (for wrapping)

1/2 cup shredded carrots

1/2 cup diced celery

1/4 cup crumbled blue cheese (optional)

Fresh cilantro or parsley, chopped (for garnish)

Instructions

Preparation: Start by prepping your ingredients. Chop the onion, celery, and garlic. Rinse the lettuce leaves and pat them dry. Set aside.

Cook Turkey: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, or until softened.

Add Garlic: Stir in the minced garlic and cook for another minute until fragrant.

Brown Turkey: Add the ground turkey to the skillet. Break it apart with a spatula and cook until browned and fully cooked through, about 6-8 minutes.

Season: Stir in the buffalo sauce, smoked paprika, onion powder, salt, and pepper. Mix well to ensure the turkey is evenly coated. Let it simmer on low heat for an additional 2-3 minutes to meld the flavors.

Assemble Wraps: On each lettuce leaf, place a generous scoop of the buffalo turkey mixture. Top with shredded carrots, diced celery, and crumbled blue cheese if using.

Garnish: Sprinkle fresh cilantro or parsley on top for an extra pop of flavor.

Serve: Roll up your lettuce wrap tightly and enjoy while warm! You can also serve with extra buffalo sauce on the side for dipping.
