Ingredients

1 cup unsalted butter, softened

1 cup packed light brown sugar

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup pecans, chopped and toasted

1/2 cup semi-sweet chocolate chips (optional)

1/4 teaspoon ground cinnamon (optional)

Instructions

Preheat Oven: Begin by preheating your oven to 350°F (175°C). Line two baking sheets with parchment paper.

Cream Butter and Sugars: In a large mixing bowl, use an electric mixer to cream together the softened butter, light brown sugar, and granulated sugar until the mixture is light and fluffy (about 3-5 minutes).

Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon (if using). Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Mix in Pecans and Chocolate Chips: Gently fold in the chopped and toasted pecans, along with the chocolate chips if you're using them. Ensure they are evenly distributed throughout the dough.

Scoop Dough: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.

Bake: Place the baking sheets in the preheated oven and bake for 10-12 minutes, or until the edges of the cookies are lightly golden but the centers are still soft.

Cool: Remove the trays from the oven and allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.

Enjoy: Serve these delicious butter pecan cookies warm or store them in an airtight container for up to a week.
