Butternut Squash and Sage Chicken Bake

4 boneless, skinless chicken breasts

1 medium butternut squash, peeled and cubed

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, diced

1 teaspoon dried sage (or 1 tablespoon fresh sage, chopped)

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika

1 cup chicken broth

1 tablespoon honey

¼ cup freshly grated Parmesan cheese

Fresh sage leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prep the Squash: Peel and cube the butternut squash into bite-sized pieces to ensure they cook evenly.

      Season the Chicken: In a large mixing bowl, combine the chicken breasts, olive oil, minced garlic, dried sage, salt, black pepper, and paprika. Mix well to coat the chicken evenly.

        Sauté the Onion: In a large oven-safe skillet or casserole dish over medium heat, add a splash of olive oil. Once hot, add the diced onion and sauté until translucent, about 4-5 minutes.

          Add the Squash: Stir in the cubed butternut squash and sauté for another 5 minutes until they start to soften slightly.

            Combine Ingredients: Lay the seasoned chicken breasts over the sautéed onion and squash. Drizzle with chicken broth and honey to add moisture and sweetness.

              Bake the Dish: Cover the skillet with aluminum foil and place it in the preheated oven. Bake for 25 minutes. After 25 minutes, remove the foil and sprinkle the grated Parmesan cheese over the top.

                Finish Cooking: Return the dish to the oven uncovered and bake for an additional 15-20 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the butternut squash is tender.

                  Serve: Remove from the oven and allow to rest for a few minutes. Garnish with fresh sage leaves if desired, and serve warm.
