Ingredients

2 cups frozen corn kernels (thawed)

1 cup shredded sharp cheddar cheese

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup unsalted butter, melted

1 cup buttermilk

2 tablespoons honey (optional)

Fresh chives, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a 9x13-inch baking dish or line it with parchment paper.

Prepare the Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, and black pepper until well combined.

Add Corn and Cheese: Gently fold in the thawed corn kernels and shredded cheddar cheese until evenly distributed in the flour mixture.

Mix Wet Ingredients: In a separate bowl, combine the melted butter, buttermilk, and honey (if using). Mix well until smooth.

Combine Ingredients: Pour the wet mixture into the dry ingredients and stir gently until just combined; be careful not to overmix.

Transfer to Baking Dish: Spoon the batter into the prepared baking dish, spreading it evenly. It's okay if it’s not perfectly smooth—this will add texture.

Bake the Biscuit Bake: Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with chopped fresh chives before serving. Cut into squares and enjoy warm!
