1 small head of green cabbage, chopped

1 pound smoked sausage (kielbasa or andouille), sliced

1 large onion, diced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon smoked paprika

½ teaspoon red pepper flakes (optional for heat)

½ teaspoon salt

½ teaspoon black pepper

1 cup chicken broth

2 tablespoons apple cider vinegar

Fresh parsley, chopped (for garnish)

Prep the Ingredients: Start by preparing your vegetables. Chop the cabbage into bite-sized pieces, slice the smoked sausage, dice the onion, and mince the garlic.

    Cook the Sausage: In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the sliced smoked sausage and sauté until browned and slightly crispy, about 5-7 minutes. Remove the sausage and set it aside.

      Sauté Aromatics: In the same skillet, add the diced onion and cook for about 3-4 minutes until it becomes translucent. Then add the minced garlic and cook for an additional 1 minute until fragrant.

        Add Cabbage and Seasonings: Toss the chopped cabbage into the skillet, along with the smoked paprika, red pepper flakes (if using), salt, and black pepper. Stir well to combine all the ingredients.

          Deglaze and Simmer: Pour in the chicken broth, scraping any browned bits from the bottom of the skillet. Bring the mixture to a gentle simmer. Cover the skillet and cook for about 15 minutes, stirring occasionally until the cabbage is tender.

            Finish with Vinegar and Sausage: Add the browned sausage back into the skillet along with the apple cider vinegar. Stir to combine, and let it cook uncovered for another 5 minutes to allow the flavors to meld together.
