Caprese Pasta Salad

Ingredients
  

12 oz (340g) of pasta (fusilli or penne work well)

1 cup cherry tomatoes, halved

8 oz (225g) fresh mozzarella balls, halved

1 cup fresh basil leaves, chopped

½ cup balsamic vinegar

½ cup extra virgin olive oil

2 cloves garlic, minced

Salt and freshly cracked black pepper, to taste

Optional: ¼ tsp red pepper flakes for a hint of spice

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside.

    Prepare the Dressing: In a small bowl, whisk together the balsamic vinegar, olive oil, minced garlic, salt, black pepper, and red pepper flakes (if using). Adjust seasoning to your taste.

      Combine Ingredients: In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, mozzarella balls, and chopped basil.

        Dress the Salad: Pour the dressing over the pasta mixture and toss gently until everything is evenly coated.

          Chill and Serve: Cover the bowl with plastic wrap and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature, garnished with extra basil leaves if desired.
