For the crust and topping:

2 cups all-purpose flour

1 cup old-fashioned rolled oats

1 cup brown sugar, packed

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 cup unsalted butter, melted (2 sticks)

For the apple filling:

4 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and diced

1 tablespoon lemon juice

1/4 cup granulated sugar

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1 tablespoon all-purpose flour

For the caramel:

1 cup soft caramel candies, unwrapped

2 tablespoons heavy cream

Instructions
 

Prepare the Apple Filling:

    - In a large bowl, combine the diced apples with lemon juice, granulated sugar, cinnamon, nutmeg, and flour. Mix well and set aside to allow the flavors to meld.

      Make the Crust and Topping:

        - Preheat your oven to 350°F (175°C).

          - In a mixing bowl, whisk together the flour, oats, brown sugar, baking soda, cinnamon, and salt until well combined.

            - Pour in the melted butter and mix until crumbly. Reserve about 1 cup of the mixture for topping, and press the remaining mixture evenly into the bottom of a greased 9x13-inch baking dish to form the crust.

              Assemble the Bars:

                - Spread the apple filling evenly over the crust.

                  - Crumble the reserved streusel mixture on top of the apples.

                    Bake the Bars:

                      - Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the apples are tender.
