250g spaghetti or any pasta of choice

2 large yellow onions, thinly sliced

3 tablespoons olive oil (divided)

2 tablespoons unsalted butter

3 cloves garlic, minced

½ teaspoon salt (to taste)

½ teaspoon black pepper

1 teaspoon sugar

¼ teaspoon red chili flakes (adjust to taste)

1 tablespoon balsamic vinegar

50g grated Parmesan cheese (or nutritional yeast for a vegan option)

Fresh basil leaves, for garnish

Extra chilli oil for drizzling

Instructions
 

Cook the Pasta:

    - Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

      Caramelize the Onions:

        - In a large skillet, heat 2 tablespoons of olive oil and the butter over medium heat. Add the sliced onions and a pinch of salt. Cook for 15-20 minutes, stirring occasionally, until they become soft and caramelized. If they start to stick, you can add a splash of water to deglaze the pan.

          Enhance the Flavor:
