1 lb fresh carrots, peeled and chopped

1 medium onion, diced

2 tablespoons fresh ginger, minced

3 cloves garlic, minced

4 cups vegetable broth

1 cup coconut milk

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon ground coriander

Salt and pepper to taste

1 tablespoon lemon juice

Fresh parsley or cilantro for garnish

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Then, stir in the minced garlic and ginger, and cook for an additional 2 minutes until fragrant.

    Cook the Carrots: Add the chopped carrots to the pot, followed by cumin and coriander. Stir everything together, letting the spices coat the carrots, and cook for another 3 minutes.

      Simmer: Pour in the vegetable broth, bringing the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 20 minutes, or until the carrots are tender.

        Blend the Soup: Using an immersion blender, puree the soup until it's smooth. If you prefer a chunkier texture, you can blend only half of the soup or use a regular blender in batches.
