1 medium head of cauliflower, riced (about 4 cups)

2 tablespoons vegetable oil (or sesame oil for extra flavor)

2 large eggs, lightly beaten

1 cup mixed vegetables (peas, carrots, and corn)

3 green onions, chopped

2 cloves garlic, minced

1 tablespoon soy sauce (or tamari for gluten-free)

1 tablespoon oyster sauce (optional)

1 tablespoon sesame seeds (for garnish)

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Rice the Cauliflower: Cut the cauliflower into florets and pulse in a food processor until it resembles rice. Alternatively, you can use pre-riced cauliflower from the grocery store. Set aside.

    Cook the Eggs: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Pour in the beaten eggs and scramble until fully cooked. Remove the eggs from the pan and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the mixed vegetables and cook for 2-3 minutes until they are tender but still crisp.

        Add the Cauliflower: Stir in the riced cauliflower and cook for about 5-7 minutes, stirring occasionally until it begins to soften and is heated through.

          Combine Ingredients: Return the scrambled eggs to the skillet with the cauliflower and vegetables. Add the chopped green onions, soy sauce, oyster sauce (if using), salt, and pepper. Stir well to combine and heat through for another 2-3 minutes.

            Final Touches: Remove from heat and serve hot. Sprinkle with sesame seeds and garnish with fresh cilantro or parsley if desired.
