Ingredients

1 ½ cups all-purpose flour

½ teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 cup buttermilk

2 large eggs

¼ cup melted butter

1 cup diced assorted charcuterie (such as salami, prosciutto, and chorizo)

⅓ cup diced cheese (like cheddar, gouda, or brie)

½ cup chopped olives (green or black)

¼ cup sun-dried tomatoes, chopped

Fresh herbs (rosemary or thyme) for garnish

Optional: a sprinkle of red pepper flakes for a kick

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease it.

Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

Wet Ingredients: In a separate bowl, mix the buttermilk, eggs, and melted butter together until smooth.

Combine: Pour the wet ingredients into the dry ingredients and stir gently until just combined; be careful not to over-mix!

Fold in Charcuterie: Gently fold in the diced charcuterie, cheese, olives, and sun-dried tomatoes into the batter, ensuring they are evenly distributed.

Scoop Batter: Using a spoon or ice cream scoop, distribute the batter evenly into the prepared muffin tin, filling each cup about ¾ full.

Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean and the muffins are golden brown on top.

Cool and Garnish: Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. Garnish with fresh herbs and a sprinkle of red pepper flakes if desired.

Serve: These muffins can be enjoyed warm or at room temperature. Serve them with a side of honey or mustard for an extra kick!
