2 boneless, skinless chicken breasts

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon dried thyme

1 tablespoon olive oil

1 cup sliced salami

1 cup diced ham

½ cup sharp cheddar cheese, shredded

½ cup baby spinach

1 cup grape tomatoes, halved

½ cup pitted kalamata olives, halved

1 tablespoon balsamic glaze

Fresh parsley for garnish

Salt and pepper to taste

Instructions
 

Prepare the Chicken: Season the chicken breasts with smoked paprika, garlic powder, dried thyme, salt, and pepper. Ensure both sides of the chicken are well-coated with the spices.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and sear for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Cook the Charcuterie: In the same skillet, add the sliced salami and diced ham. Sauté for about 2-3 minutes until they start to crisp slightly.

        Add Vegetables: Lower the heat to medium and add the grape tomatoes, baby spinach, and kalamata olives into the skillet. Cook for another 3-4 minutes, stirring occasionally until the spinach wilts and the tomatoes soften.

          Combine: Return the seared chicken to the skillet, nestling it amidst the charcuterie and vegetables. Sprinkle the shredded cheddar cheese over the top and cover the skillet with a lid or foil for about 2 minutes, allowing the cheese to melt.
