4 large corn tortillas

2 cups fresh corn kernels (or frozen, if not in season)

1 can (15 oz) black beans, rinsed and drained

1 red bell pepper, diced

1 small red onion, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

Salt and pepper to taste

1 cup crumbled feta cheese (optional)

1 avocado, sliced

Fresh cilantro for garnish

Prepare the Grill or Pan: Preheat your grill or a cast-iron skillet over medium-high heat. If you’re using a grill, ensure the grates are clean and lightly oiled.

    Char the Corn: In a bowl, combine the fresh corn kernels with a drizzle of olive oil, salt, and pepper. Add the corn to the hot grill or skillet. Cook for about 7-10 minutes, turning occasionally until the corn is charred and slightly caramelized. Remove from heat.

      Sauté the Vegetables: In a separate skillet, heat another tablespoon of olive oil over medium heat. Add the diced red bell pepper and red onion. Sauté for about 5 minutes until softened. Add the minced garlic, smoked paprika, and cumin. Cook for an additional 2 minutes, stirring constantly until fragrant.

        Add the Beans and Corn: To the sautéed vegetables, add the charred corn and black beans. Stir well to combine. Cook for another 3-5 minutes, allowing the flavors to meld together. Adjust seasoning with salt and pepper to taste.

          Warm the Tortillas: If using a griddle or skillet, warm the corn tortillas on low heat for about 1-2 minutes per side until pliable. If you prefer, you can also wrap them in aluminum foil and warm them in the oven.
