1 medium zucchini, sliced into rounds

1 red bell pepper, cut into squares

1 yellow bell pepper, cut into squares

1 cup cherry tomatoes

1 red onion, cut into chunks

1 cup button mushrooms, whole

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

4 tablespoons balsamic vinegar

2 tablespoons honey (or maple syrup for a vegan option)

Fresh basil leaves, for garnish

Instructions
 

Prepare the Vegetables: In a large mixing bowl, combine the zucchini, bell peppers, cherry tomatoes, red onion, and mushrooms.

    Seasoning: Drizzle the olive oil over the vegetables. Sprinkle the garlic powder, smoked paprika, salt, and pepper. Toss the veggies until they are well coated with the oil and seasonings.

      Soak Skewers: If using wooden skewers, soak them in water for about 30 minutes to prevent burning on the grill.

        Skewer the Veggies: Thread the marinated vegetables onto the skewers, alternating between different types for a colorful presentation.

          Make the Balsamic Glaze: In a small saucepan over medium heat, combine balsamic vinegar and honey. Bring it to a simmer, then reduce the heat and let it thicken for about 5-7 minutes, stirring occasionally until it coats the back of a spoon.
