1 lb (450g) boneless, skinless chicken breasts, diced

8 oz (225g) penne pasta

1 medium onion, chopped

3 cloves garlic, minced

1 medium green bell pepper, diced

1 can (14 oz) diced tomatoes with green chilies

1 cup chicken broth

1 cup shredded sharp cheddar cheese

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Cook the pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté the chicken: In a large skillet over medium heat, add olive oil. Once hot, add the diced chicken. Season with salt, pepper, chili powder, cumin, and smoked paprika. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the vegetables: In the same skillet, add chopped onion and green bell pepper. Sauté for about 3-4 minutes until they start to soften. Add the minced garlic and cook for another 30 seconds until fragrant.

        Combine ingredients: Pour in the diced tomatoes with their juices and the chicken broth. Bring the mixture to a simmer, scraping the bottom of the skillet to loosen any browned bits from the chicken.
