Ingredients
  

4 boneless, skinless chicken breasts

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese, divided

1 cup breadcrumbs (preferably Italian seasoned)

1/2 cup all-purpose flour

2 large eggs

2 cups marinara sauce

1 tablespoon dried oregano

1 tablespoon Italian seasoning

Salt and pepper to taste

Olive oil for frying

Fresh basil leaves for garnish (optional)

Instructions
 

Prepare the Chicken:

    - Preheat your oven to 375°F (190°C).

      - Place each chicken breast between two pieces of plastic wrap or parchment paper and use a meat mallet to pound them to about 1/2 inch thick. This will help the chicken cook evenly and make it easier to roll.

        Stuff the Chicken:

          - In a bowl, mix the shredded cheddar cheese, half of the grated Parmesan cheese, oregano, and Italian seasoning. Season with salt and pepper.

            - Place about 2 tablespoons of the cheese mixture onto each chicken breast, spreading it evenly. Roll the chicken up tightly from the larger end down to the smaller end and secure with toothpicks.

              Set Up Breading Station:

                - In a shallow dish, place the flour. In another dish, beat the eggs. In a third dish, combine the breadcrumbs with the remaining Parmesan cheese.

                  Coat the Chicken:

                    - Dredge each chicken roll in the flour, shaking off excess, then dip it into the beaten eggs, and finally coat it thoroughly in the breadcrumb mixture.

                      Cook the Chicken:

                        - In a large, oven-safe skillet, heat about 2 tablespoons of olive oil over medium heat. Once hot, add the chicken roll-ups, seam side down, and cook for about 4-5 minutes per side, until golden brown. You may need to do this in batches depending on the size of the pan.

                          Add Marinara Sauce:

                            - Once all the roll-ups are browned, pour the marinara sauce over the chicken in the skillet and sprinkle the remaining Parmesan cheese on top.

                              Bake:

                                - Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).

                                  Serve:

                                    - Remove from the oven, let cool slightly, then remove toothpicks. Garnish with fresh basil leaves if desired. Serve with additional marinara sauce on the side and enjoy your cheesy, savory treat!
