Ingredients

4 boneless, skinless chicken breasts

1 cup breadcrumbs (preferably panko for extra crunch)

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

2 large eggs

1/4 cup all-purpose flour

Olive oil spray (or regular olive oil for frying)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray it with olive oil.

Prepare the Chicken: Rinse the chicken breasts and pat them dry with a paper towel. If they're thick, consider pounding them to an even thickness for uniform cooking.

      Set Up Your Dredging Station:

        - In a shallow bowl, place the flour.

          - In another shallow bowl, beat the eggs.

            - In a third bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper.

              Coat the Chicken:

                - First, dredge each chicken breast in the flour, shaking off any excess.

                  - Next, dip it in the beaten eggs, ensuring it's coated completely.

                    - Finally, press the chicken breast into the breadcrumb mixture, coating it evenly on both sides. Make sure to pack the crumbs and cheese onto the chicken to create a thick layer.

Arrange on Baking Sheet: Place the coated chicken breasts on the prepared baking sheet. If desired, lightly spray the tops with olive oil for extra crispiness while baking.

Bake: Bake in the preheated oven for 25–30 minutes, or until the chicken is cooked through (internal temperature of 165°F/75°C) and the crust is golden and crispy.

Serve & Enjoy: Remove from the oven and let rest for a couple of minutes. Garnish with freshly chopped parsley before serving. Pair with your favorite dipping sauce or a side salad for a complete meal!
