1 ½ cups Oreo cookie crumbs

½ cup unsalted butter, melted

2 tablespoons granulated sugar

24 oz (3 packages) cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

8 oz Godiva chocolate, melted and slightly cooled (plus more for drizzling)

1 cup sour cream

½ cup heavy cream

For the ganache topping:

8 oz Godiva chocolate, chopped

½ cup heavy cream

Garnish:

Whipped cream

Chocolate shavings or grated chocolate

Instructions
 

Prepare the crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium bowl, mix the Oreo cookie crumbs, melted butter, and sugar until combined.

        - Press the mixture evenly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let it cool while preparing the filling.

          Make the cheesecake filling:

            - In a large mixing bowl, beat the softened cream cheese and sugar with an electric mixer until smooth and creamy.

              - Add the vanilla extract and mix until well incorporated.

                - Add the eggs one at a time, mixing until just blended. Avoid overmixing.

                  - Fold in the melted Godiva chocolate, sour cream, and heavy cream, mixing until the mixture is smooth and fully combined.

                    Combine and bake:

                      - Pour the cheesecake filling over the prepared crust, smoothing the top with a spatula.
