Cheesy Bacon Breakfast Casserole

Ingredients
  

1 lb bacon, chopped

1 small onion, diced

1 red bell pepper, diced

4 cups frozen hash browns (thawed)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

8 large eggs

2 cups milk

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Fresh chives, chopped (for garnish)

Instructions
 

Preheat Your Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter.

    Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crisp. Remove the bacon with a slotted spoon and place it on a paper towel-lined plate to drain. Leave about 2 tablespoons of bacon grease in the skillet.

      Sauté the Vegetables: In the same skillet, add the diced onion and red bell pepper to the bacon grease. Sauté for about 5 minutes or until softened. Remove from heat.

        Layer the Hash Browns: Spread the thawed hash browns evenly in the bottom of the prepared baking dish.

          Add the Bacon and Vegetables: Evenly sprinkle the cooked bacon and the sautéed onion and bell pepper over the hash browns.

            Mix the Cheeses: In a small bowl, combine the shredded cheddar and mozzarella cheeses. Layer half of the cheese mixture over the bacon and vegetables in the baking dish.

              Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and onion powder until well combined.

                Combine All Ingredients: Pour the egg mixture evenly over the layered ingredients in the baking dish. Finish with the remaining cheese on top.

                  Bake the Casserole: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, uncover and bake for an additional 15-20 minutes, or until the casserole is set and the top is bubbly and golden.

                    Cool and Garnish: Once baked, allow the casserole to cool for about 5 minutes before slicing. Garnish with chopped fresh chives before serving.
