1 lb ground beef

1 cup long-grain white rice, uncooked

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) diced tomatoes, drained

1 cup beef broth

2 cups shredded sharp cheddar cheese, divided

1 cup shredded mozzarella cheese

1 teaspoon Worcestershire sauce

1 teaspoon paprika

½ teaspoon black pepper

1 teaspoon salt

1 teaspoon dried Italian herbs (basil, oregano, thyme)

1 cup frozen peas and carrots mix (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Ground Beef: In a large skillet over medium heat, add the ground beef. Cook until well browned, breaking it apart with a spatula. Drain excess fat.

      Sauté Veggies: Add the diced onion and minced garlic to the skillet with the ground beef. Sauté for about 5 minutes until the onion is translucent.

        Mix Everything Together: Stir in the drained diced tomatoes, beef broth, Worcestershire sauce, paprika, black pepper, salt, and Italian herbs. Mix well.

          Combine Rice: Add the uncooked rice and the frozen peas and carrots (if using) to the beef mixture. Stir thoroughly to ensure everything is well combined.

            Add Cheese: Remove the skillet from heat and add 1 cup of sharp cheddar cheese and the mozzarella cheese. Mix until the cheese is melted and evenly distributed.

              Transfer to Baking Dish: Pour the beef and rice mixture into a greased 9x13 inch baking dish, spreading it evenly.

                Top with Cheese: Sprinkle the remaining 1 cup of sharp cheddar cheese evenly over the top of the casserole.

                  Bake: Cover with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and the rice is tender.

                    Garnish and Serve: Once baked, let it cool for about 5 minutes. Garnish with freshly chopped parsley before serving to add a touch of color and flavor.
