6 large eggs

1/2 cup shredded cheddar cheese

1/2 cup diced bell peppers (any color)

1/4 cup diced onions

1/4 cup cooked and crumbled bacon or sausage (optional)

1/4 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika

Fresh chives or parsley, chopped (for garnish)

Cooking spray or muffin liners

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). If you're using muffin liners, line a 12-cup muffin tin. Otherwise, spray the tin with cooking spray.

    Prepare the Vegetables: In a skillet over medium heat, add a splash of oil and sauté the diced bell peppers and onions until they are soft, about 3-4 minutes. Remove from heat and let cool slightly.

      Mix the Eggs: In a large mixing bowl, crack the 6 eggs and beat them well. Stir in the garlic powder, salt, black pepper, and paprika until combined.

        Combine Ingredients: Add the sautéed vegetables, crumbled bacon (if using), and shredded cheddar cheese to the egg mixture. Stir gently until everything is evenly distributed.

          Fill the Muffin Cups: Pour the egg mixture evenly into each muffin cup, filling them about 3/4 full to allow for rising during baking.

            Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes or until the muffins have risen and are fully cooked in the center (a toothpick inserted should come out clean).
