2 cups vegetable broth or water

3 cups fresh broccoli florets (or frozen, thawed)

1 cup sharp cheddar cheese, grated

1 cup mozzarella cheese, grated

1 cup cream of mushroom soup (or homemade)

1/2 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt (adjust to taste)

1/2 teaspoon paprika (optional, for garnish)

1/2 cup breadcrumbs (for topping)

2 tablespoons olive oil or melted butter (for breadcrumbs)

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook the Rice: In a medium saucepan, bring the vegetable broth (or water) to a boil. Add the rice, cover, and reduce the heat to low. Let it simmer for about 15-20 minutes or until cooked and fluffy. Set aside.

      Prepare the Broccoli: While the rice cooks, steam the broccoli florets until they are tender but still crisp, about 5 minutes. If using frozen broccoli, ensure it's thawed and well-drained.

        Mix the Ingredients: In a large mixing bowl, combine the cooked rice, steamed broccoli, grated cheddar cheese (reserve a bit for topping), grated mozzarella cheese, cream of mushroom soup, milk, garlic powder, onion powder, black pepper, and salt. Stir until everything is well combined.

          Transfer to Casserole Dish: Grease a 9x13 inch casserole dish with a little olive oil or butter. Pour the broccoli and rice mixture into the dish and spread evenly.

            Prepare the Topping: In a small bowl, mix the breadcrumbs with olive oil or melted butter. Stir in the remaining reserved cheddar cheese and paprika. Sprinkle this mixture evenly over the broccoli and rice casserole.
