2 cups fresh broccoli florets (steamed or blanched)

1 cup uncooked white rice (long-grain)

2 cups vegetable broth (or chicken broth)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup milk (or cream for extra richness)

1/2 cup grated Parmesan cheese

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for a bit of kick)

1/2 cup breadcrumbs (for topping)

2 tablespoons olive oil or melted butter (for topping)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook Rice: In a medium saucepan, combine the uncooked rice and vegetable broth. Bring it to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and all the liquid has been absorbed.

      Prepare Broccoli: If using fresh broccoli, steam or blanch the florets until bright green and just tender, about 3-4 minutes, then immediately transfer them to an ice bath to stop the cooking process. Drain and set aside.

        Sauté Aromatics: In a skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute, until fragrant. Remove from heat.

          Mix the Casserole: In a large mixing bowl, combine the cooked rice, sautéed onions and garlic, steamed broccoli, milk, cheddar cheese, mozzarella cheese, onion powder, garlic powder, salt, black pepper, and red pepper flakes (if using). Stir until well combined.

            Transfer to Baking Dish: Pour the mixture into a greased 9x13-inch baking dish, spreading it evenly.

              Prepare Topping: In a small bowl, mix the breadcrumbs with the melted butter or olive oil until the crumbs are nicely coated. Sprinkle the mixture evenly over the casserole. Finally, sprinkle the grated Parmesan cheese on top for extra flavor.

                Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the cheese is bubbly.
