2 cups mashed potatoes (preferably leftover)

1 cup fresh broccoli florets, steamed and chopped

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1/4 cup green onions, finely chopped

1 large egg

1/2 cup all-purpose flour (plus extra for coating)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Olive oil or cooking spray for frying

Prepare the Broccoli: Begin by steaming the broccoli florets until tender, about 4-5 minutes. Once done, chop them into small pieces and set aside.

    Mix Ingredients: In a large mixing bowl, combine the mashed potatoes, steamed broccoli, cheddar cheese, Parmesan cheese, green onions, egg, flour, garlic powder, onion powder, salt, and pepper. Mix everything together until well combined.

      Form the Cakes: With your hands, take a portion of the mixture and form it into a patty about 1/2 inch thick. Repeat this step until all the mixture is used. You should have about 8-10 cakes.

        Coat the Cakes: Lightly dredge each cake in flour to ensure a crispy exterior, shaking off any excess.
