Cheesy Chicken and Spinach Stuffed Shells

20 large jumbo pasta shells

2 cups cooked chicken, shredded (rotisserie chicken works great)

2 cups fresh spinach, chopped

1 ½ cups ricotta cheese

1 cup mozzarella cheese, shredded (plus extra for topping)

½ cup Parmesan cheese, grated

1 egg, beaten

2 cups marinara sauce

2 teaspoons garlic powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the jumbo pasta shells and cook according to package instructions until al dente. Drain and set aside to cool.

      Prepare the Filling: In a large mixing bowl, combine the shredded chicken, chopped spinach, ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, beaten egg, garlic powder, Italian seasoning, salt, and pepper. Mix until all ingredients are well combined.

        Stuff the Shells: Carefully take each cooked shell and fill it with the chicken and spinach mixture, using a spoon or a piping bag for ease.

          Layer the Marinara: Spread half of the marinara sauce evenly across the bottom of a 9x13 inch baking dish. Arrange the stuffed shells on top of the sauce.

            Add More Sauce & Cheese: Pour the remaining marinara sauce over the stuffed shells, making sure to cover them well. Sprinkle the remaining 1 cup of mozzarella cheese on top.

              Cover and Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                Garnish and Serve: Once out of the oven, let the shells sit for 5-10 minutes. Garnish with fresh basil leaves before serving.
