1 lb (450g) boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (15 oz) black beans, rinsed and drained

1 can (10 oz) enchilada sauce

1 cup corn (frozen or canned)

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

2 cups shredded cheese (cheddar, Monterey Jack, or a blend)

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Tortilla chips (for serving, optional)

Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt, pepper, chili powder, cumin, and smoked paprika. Cook for about 5-7 minutes or until the chicken is browned and cooked through. Remove the chicken and set aside.
