4 large Russet potatoes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

2 cups shredded cheddar cheese

1 cup chili con carne (canned or homemade)

1/2 cup sour cream

1/4 cup chopped green onions

1/4 cup pickled jalapeños (optional)

Fresh cilantro for garnish (optional)

Prepare the Potatoes: Preheat your oven to 425°F (220°C). Scrub the potatoes thoroughly, then cut them into 1/4-inch wide fries.

    Season the Fries: In a large bowl, toss the fries with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.

      Bake the Fries: Spread the seasoned fries in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 30-35 minutes, turning halfway through, until they are golden brown and crispy.
