2 medium zucchinis, grated

1 teaspoon salt

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 cup shredded cheddar cheese

1/4 cup crumbled feta cheese

2 large eggs, beaten

1/4 cup fresh cilantro, chopped (or parsley)

1/4 cup diced jalapeños (adjust to taste)

1/3 cup green onions, chopped

Olive oil or vegetable oil for frying

Sour cream or Greek yogurt for serving (optional)

Prepare the Zucchini: In a large bowl, grate the zucchinis and sprinkle with the teaspoon of salt. Let them sit for about 15-20 minutes. This will help draw out excess moisture.

    Squeeze Out Excess Liquid: After resting, squeeze the grated zucchini using a clean kitchen towel or cheesecloth to remove as much liquid as possible. This step is crucial to ensure your fritters are not soggy.

      Mix Dry Ingredients: In a separate bowl, combine the flour, baking powder, black pepper, garlic powder, and onion powder. Mix well to combine.

        Combine Mixtures: In another bowl, mix the grated zucchini, beaten eggs, shredded cheddar, crumbled feta, jalapeños, cilantro, and green onions together until well combined.
