For the crust:

1 cup all-purpose flour

½ cup sugar

½ cup unsalted butter, melted

1 teaspoon baking powder

½ teaspoon vanilla extract

½ teaspoon salt

1 egg

For the cheese layer:

1 cup cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

For the fruit topping:

1 cup strawberries, hulled and sliced

1 cup blueberries

1 cup kiwi, peeled and sliced

1 cup pineapple chunks

1 banana, sliced

½ cup shredded coconut (optional)

For the glaze:

¼ cup apricot preserves

1 tablespoon water

Preheat the oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking pan.

    Prepare the crust: In a large mixing bowl, combine the flour, sugar, melted butter, baking powder, vanilla extract, and salt. Mix until well incorporated. Add the egg and stir until a dough forms.

      Bake the crust: Press the dough evenly into the bottom of the prepared baking pan. Bake for 15-20 minutes or until the edges are lightly golden. Allow to cool completely.

        Make the cheese layer: In another bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.

          Assemble the casserole: Once the crust has cooled, spread the cream cheese mixture evenly over the crust.

            Add the fruit: Artfully layer the strawberries, blueberries, kiwi, pineapple, and banana on top of the cream cheese layer. If using, sprinkle shredded coconut over the fruit.

              Prepare the glaze: In a small saucepan over low heat, combine the apricot preserves and water. Stir until melted and smooth. Brush the glaze over the fruit layer for a shiny finish.

                Chill and serve: Refrigerate the casserole for at least 2 hours to set. Cut into squares and serve chilled.
