Cheesy Ground Turkey Enchilada Bake

1 pound ground turkey

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 tablespoon taco seasoning

1 can (15 ounces) black beans, drained and rinsed

1 can (10 ounces) enchilada sauce (red or green)

8 corn tortillas

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup corn (fresh, frozen, or canned)

1/4 cup chopped fresh cilantro (optional for garnish)

1 avocado, sliced (optional for serving)

Sour cream (optional for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Turkey: In a large skillet over medium heat, add the olive oil. Once hot, add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

      Add Ground Turkey and Seasoning: Add the ground turkey to the skillet. Break it up with a spatula and cook until browned and cooked through, about 5-7 minutes. Stir in the taco seasoning and mix well.

        Combine Ingredients: Once the turkey is cooked, stir in the black beans, enchilada sauce, and corn. Mix until well combined and heated through, about 2-3 minutes.

          Layer the Dish: In a greased 9x13 inch baking dish, spread a thin layer of the turkey and bean mixture on the bottom. Place 4 corn tortillas over the mixture. Add half of the remaining turkey filling on top of the tortillas, and sprinkle with 1 cup of shredded cheddar and Monterey Jack cheese. Repeat the layering with the remaining tortillas, turkey filling, and top with the last cup of cheese.

            Bake: Cover the baking dish with aluminum foil (to avoid sticking, spray the foil with cooking spray) and bake for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.
