1 lb Italian sausage (mild or spicy, your choice)

1 medium onion, diced

3 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

1 can (14.5 oz) diced tomatoes, undrained

4 cups chicken broth

1 cup heavy cream

1 package (9 oz) refrigerated cheese tortellini

2 cups fresh spinach

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

1 cup shredded mozzarella cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Brown the Sausage: In a large pot or Dutch oven, heat over medium heat. Add the Italian sausage, breaking it up with a spatula. Cook until browned and no longer pink, about 5-7 minutes. Drain excess fat if necessary.

    Sauté the Vegetables: Add the diced onion, carrots, and celery to the pot. Cook, stirring occasionally, until the vegetables are softened, about 3-4 minutes. Stir in the minced garlic and cook for another minute, until fragrant.
