Ingredients

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 (14 oz) can diced tomatoes (with juices)

2 cups beef broth

1 cup elbow macaroni

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Instructions

Cook the Beef: In a large skillet or frying pan over medium heat, add the ground beef. Use a wooden spoon to break it apart and cook until browned and no longer pink, about 5-7 minutes. Drain excess fat if necessary.

Add Vegetables: Stir in the chopped onion, minced garlic, and diced bell pepper to the skillet. Sauté for another 3-4 minutes until the vegetables have softened.

Combine Ingredients: Add the diced tomatoes (with their juices), beef broth, elbow macaroni, smoked paprika, Italian seasoning, salt, and pepper. Stir well to combine all ingredients.

Cook the Macaroni: Bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 10-12 minutes, or until the macaroni is cooked al dente and the liquid has reduced slightly.

Add Cheese: Remove the skillet from heat and sprinkle the shredded cheddar cheese evenly over the top. Cover again for 1-2 minutes, allowing the cheese to melt.

Serve: After the cheese has melted, gently stir to mix in the cheese with the beef and macaroni. Garnish with fresh parsley before serving.
