12-15 jumbo pasta shells

1 cup frozen spinach, thawed and drained

1 cup canned artichoke hearts, drained and chopped

1 cup ricotta cheese

1 cup cream cheese, softened

1 cup mozzarella cheese, shredded (plus extra for topping)

1/2 cup Parmesan cheese, grated

2 cloves garlic, minced

1 tsp onion powder

1/2 tsp red pepper flakes (optional)

Salt and black pepper to taste

2 cups marinara sauce (store-bought or homemade)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Shells: In a large pot, bring salted water to a boil. Add the jumbo pasta shells and cook until al dente, following the package instructions. Drain and set aside to cool.

      Prepare the Filling: In a mixing bowl, combine the thawed spinach, chopped artichoke hearts, ricotta cheese, cream cheese, 1 cup of mozzarella cheese, Parmesan cheese, minced garlic, onion powder, red pepper flakes (if using), salt, and black pepper. Mix well until all ingredients are thoroughly combined.

        Stuff the Shells: Take a tablespoon of the filling and gently stuff each cooked pasta shell. Place the stuffed shells seam-side up in a greased baking dish.
