Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Zucchini: Grate the zucchinis using a box grater or food processor. Place them into a clean kitchen towel or cheesecloth, twist it closed, and squeeze out as much moisture as possible. This step is crucial to prevent a soggy casserole.

      Sauté the Aromatics: In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes. Remove from heat and set aside to cool slightly.
