Cherry Balsamic Chicken Thighs

4 bone-in, skin-on chicken thighs

1 cup fresh or frozen cherries, pitted

1/2 cup balsamic vinegar

2 tablespoons honey

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (for garnish)

Marinate the Chicken: In a large bowl, combine balsamic vinegar, honey, olive oil, minced garlic, chopped rosemary, salt, and pepper. Mix well. Add the chicken thighs, ensuring they are coated in the marinade. Cover and refrigerate for at least 30 minutes or up to overnight for more flavor.

    Preheat the Oven: Preheat your oven to 425°F (220°C).

      Prepare the Cherry Sauce: In a saucepan over medium heat, combine the pitted cherries and 1/4 cup of the marinade reserved from the chicken. Cook for about 5-7 minutes, stirring occasionally, until the cherries soften and the sauce thickens slightly.

        Sear the Chicken: In a large, oven-safe skillet, heat a little olive oil over medium-high heat. Remove the chicken thighs from the marinade and brown them skin-side down for about 5 minutes, until the skin is crispy. Flip the chicken and sear the other side for an additional 3 minutes.

          Combine and Bake: Pour the cherry sauce over the chicken thighs in the skillet. Transfer the skillet to the preheated oven and bake for about 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is caramelized and crispy.

            Rest and Serve: Remove the skillet from the oven and let the chicken rest for 5 minutes. Garnish with fresh parsley before serving.
