Cherry Balsamic Chicken Thighs

4 bone-in chicken thighs, skin-on

Salt and pepper, to taste

2 tablespoons olive oil

1 cup fresh or frozen cherries, pitted and halved

1/2 cup balsamic vinegar

1/3 cup honey

2 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)

Optional garnish: fresh parsley, chopped

Prepare the Chicken: Pat the chicken thighs dry with paper towels. Season both sides generously with salt and pepper.

    Brown the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken thighs, skin-side down. Sear for about 5-7 minutes until the skin is golden brown and crispy. Flip the thighs over and cook for an additional 5 minutes. Remove and set aside.

      Make the Cherry Balsamic Sauce: In the same skillet, add garlic and sauté for about 30 seconds until fragrant. Stir in the balsamic vinegar, honey, and fresh cherries. Bring the mixture to a simmer and cook for about 2-3 minutes, allowing the sauce to thicken slightly.

        Combine: Return the chicken thighs to the skillet, skin-side up. Spoon some of the cherry-balsamic sauce over the chicken. Add rosemary and thyme.

          Cook through: Reduce heat to medium-low, cover the skillet, and let the chicken simmer for about 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

            Serve: Once cooked, remove from heat. Optionally, sprinkle with fresh parsley for garnish. Serve the chicken thighs drizzled with the cherry balsamic sauce alongside your choice of sides, such as roasted vegetables or a fresh salad.
