4 boneless, skinless chicken breasts

1 cup fresh or frozen pitted cherries

1/2 cup chicken broth

1/4 cup honey

2 tablespoons balsamic vinegar

1 tablespoon soy sauce

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 5-7 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

    Make the Cherry Glaze: In the same skillet, add the garlic and ginger, sautéing for about 1 minute until fragrant. If using fresh cherries, pit and chop them, then add to the skillet along with the chicken broth, honey, balsamic vinegar, and soy sauce. Stir to combine and bring to a simmer.

      Thicken the Sauce: Once the mixture is bubbling, slowly add the cornstarch slurry (cornstarch mixed with water) to the skillet while continuously stirring. This will help the glaze thicken. Let it simmer for another 5 minutes, until the sauce has reduced and thickened to a glaze.

        Combine: Return the cooked chicken breasts to the skillet, coating them well with the cherry glaze. Cook for an additional 2-3 minutes on low heat, allowing the chicken to soak in the flavors.

          Serve: Remove from heat. Slice the chicken if desired, and drizzle extra glaze over the top. Garnish with freshly chopped parsley before serving.
